Crazy canning season has come to an end and its time to add up my 2019 canning numbers!
This year was, by far, my most productive. I normally average around 500 jars. By August, it was evident that I would be easily reaching that goal, I just didn’t expect to completely blow it out of the water!
We had a wonderful garden harvest in 2019. Counting my blessings as I know there are so many out there who were not as fortunate.
Not everything I can comes from our homestead. I was able to get a great deal on a couple bushels of peaches, wonderful friends gave us grapes and apples (ours didn’t produce), and I can mushrooms when I find great deals at the store.
Canning season for me lasts all year long. However, there definitely is a busy season. July-September tend to yield the most jars canned compared to the other months of the year. There is a chance I will still can a few more jars before 2019 comes to a close but now that the busiest time is over, I feel comfortable making this Canning Numbers post!

That’s just crazy town! Mike even had to put up a couple extra shelves to hold all of our canning goodness! AND I had to get more jars. Thankfully my grandma had a bunch to give me :).

Chicken Stock: 19 pints
Beef Stock: 7 quarts, 20 pints

Kosher Dill Pickles: 2 quarts, 8 pints
Sandwich Pickles: 7 quarts
Tomato Sauce: 24 quarts, 17 pints
Diced Tomatoes: 5 quarts, 16 pints
Tomato Juice: 2 quarts, 3 pints
Pizza Sauce: 11 1/2 pints
Rotel-Style Tomatoes: 12 1/2 pints
Zesty Salsa: 9 pints
Black Bean and Corn Salsa: 48 pints
Vegetable Soup: 7 quarts
Carrots: 14 quarts, 20 pints
750 jars! Honestly, I was 100% ready to be done when I was still canning like crazy in October- I definitely was burned out but so glad that I got through it.
We are so blessed with a great harvest. This saves us an incredible amount of money. Between our canning shelves, our freezers (filled with our homegrown chicken, beef, and pork as well as frozen fruit/veg, and venison), and our foster cow, we are able to provide nearly all of the food for our family. I am humbled to say the least!
