Chicken Roll

chicken rollDoes this ever happen to you? I plan out great meals and put time and effort into them only to get zero reaction or I have to ask if anyone likes it? Then I turn around and whip up a meal out of sheer desperation in order to get something edible on the table for dinner and they (without prompting) rave about how amazing it is how I should make it all the time!

Such is the story of my life. Just the other day, Eli ate about 5 helpings of buttered rice with seasoned salt because it was “just amazing”… I’m lucky though, my kids and husband eat pretty much anything and don’t complain at all about what I cook. I continue to plan out meals ahead of time and don’t worry if I don’t get declarations of love out of each meal. It’s great when I do though- they go right into the meal rotation list (that currently resides in the ever-filling file cabinet in my brain. I need to put them on paper one of these days…)

This is one of those what-the-heck-are-we-going-to-eat meals consisting of a few leftovers we had in the fridge. After one bite, Eli asked me what the name of the recipe was. When I told him I made it up so it didn’t have a name, he said “You are like a chef!” Awe buddy, you melt my heart! He then decided this absolutely needed a name because it was one of his favorite things I had made (number one is chicken noodle soup). William agreed. They decided on the name “chicken roll”. Works for me kids, now eat up (really, no prompting was necessary- they inhaled it and still do every time I make it).

Leftover ham or turkey is really good in this as well. This is also a great recipe to have the kids help with! Very simple and is on the table in no time!

Cut up chicken into bite size pieces.Chicken Roll

Add mayonnaise, seasoned salt, pepper, cheese and broccoli. Mix thoroughly.Chicken RollIMG_3982.2chicken roll

Open two containers of crescent roll dough. Lay out the triangles in two rows, with short ends facing each other onto a greased (or parchment paper lined) sheet tray or stone. You will need to overlap them so they fit. chicken roll

Using a rolling pin, roll the center flat so you have an area to put your filling. Make sure seams are sealed. chicken roll

Place filling in a line down the center of the crescent rolls.

Overlap the crescent rolls over the top of the filling. This doesn’t have to be pretty, just needs to hold the filling in. chicken rollchicken roll

Bake at 350ºF for 15-20 minutes or until dark golden brown.chicken rollIMG_4004.2

Let cool for 5 minutes before serving.

Chicken Roll

  • 2 cups cooked chicken (ham or turkey work great too)
  • 1/4 cup mayonnaise
  • 1 tsp seasoned salt
  • 1/4 tsp ground pepper
  • 1 cup (4 oz) shredded cheese (Cheddar, Colby, Monterey jack)
  • 1 cup cooked broccoli
  • 2 packages crescent roll dough
  1. Preheat oven to 350ºF. Cut chicken into bite size pieces. Put in large bowl.
  2. Add mayonnaise, seasoned salt, pepper, cheese, and broccoli. Mix together thoroughly.
  3. Open crescent roll packages. On large greased (or parchment paper lined) sheet tray or stone, lay triangles out in two lines with short ends touching. You will need to overlap the triangles for them to fit. Using a rolling pin, roll out center of dough to make enough room for filling. Be sure all seams are sealed.
  4. Place filling in line down center of the dough. Bring points of triangles up over filling, crisscrossing as you go. This doesn’t have to be pretty, just has to keep the filling in! Fold ends up and seal.
  5. Bake for 15-20 minutes until deep golden brown. Let cool for 5 minutes before serving. chicken roll
