More zucchini bread?! Who hasn’t had zucchini bread… unless you hate zucchini, I’m sure you have eaten a piece or two in your lifetime. BUT have you ever been lucky enough to devour a slice of Lemon Poppy Seed Zucchini Bread?
I mean, c’mon, that just sounds mouthwatering.
I love a good classic zucchini bread. There’s just nothing like it. However, zucchini bread with lemon is singing all the right notes in my book. Lemon desserts are my jam and I pretty much love every single one.
Adding poppy seeds and a super sweet glaze just takes this recipe over the top. Trust me, this is a keeper and will be a hit with anyone you serve it too.
Need any more reason to run to the garden and pick another zucchini? This also freezes beautifully! After it has cooled, wrap it up with plastic wrap and then with aluminum foil. Label and toss in the freezer! I recommend writing the glaze recipe on the foil as well so you can whip it up and drizzle it on after it thaws. It can be frozen with the glaze as well, it just doesn’t thaw as pretty.
Enough chatter already, let’s get to the recipe!
Lemon Poppy Seed Zucchini Bread
- 2 cups all-purpose flour
- 1/2 tsp salt
- 2 tsp baking powder
- 2 eggs
- 1/2 cup canola oil (or applesauce to make it a bit healthier)
- 1 1/3 cups sugar
- 2 tablespoons poppy seeds
- 2 tablespoons lemon juice
- 1/2 cup plain yogurt
- zest of one lemon
- 1 cup grated zucchini
Glaze:
- 1 cup powdered sugar
- 2 tablespoons lemon juice
- 1 tablespoon milk
Preheat oven to 350°F.
Mix together the dry ingredients; flour, salt, baking powder, sugar and poppy seeds.
In separate bowl combine the eggs, oil, lemon juice, yogurt, zest and zucchini.
Fold the dry and wet ingredients together, just until incorporated. Pour into greased loaf pan.
Bake for 50-60 minutes or until toothpick in center comes out clean.
While bread is cooling, make glaze. Let the bread cool before pouring on. Glaze will set up after a few minutes. Cut and serve.
