There are not many negatives (in my opinion) to living in the country. Unreliable internet makes the short list.
Why am I finally posting my weekly meal plan on Wednesday?! Internet. Dang internet.
NO this is not an excuse, it’s an explanation. And a sort-of vent. I’m so annoyed with our internet service but we are stuck- country life means few options and unfortunately, cruddy as it is, this is the best one. I could have thrown in the towel for this week, skip on the post, but I’m tired of failing myself- I’m determined to stick it out!
What I AM thankful for is that a week without internet (lucky us- we used up our phone data quickly after the wifi went out at the house- so 90’s living it was!) allowed me to get a lot of canning done and we dusted off some old dvd’s we haven’t watched in far too long. I also pulled out my favorite cookbooks for my weekly meal plan this week.
The Pioneer Woman. Ree Drummond is my idol. I still remember the moment at my Aunt’s house as I looked through Ree’s very first cookbook… I was mesmerized- I had never felt like a cookbook was so perfect for me as that one. Fast forward a few years and I now have four of her cookbooks and have yet to be disappointed by any recipe I try. She’s the bomb.
