One of the first spring harvests here in Wisconsin is rhubarb. Cue the dessert making! Pies, bars, muffins… drool… and my favorite treat to make with the odd vegetable- Rhubarb Slush!

This is a yummy drink that I’ve had since I was a kid (my parents always made a non-alcoholic batch for us girls) and it’s almost a must now, especially in the summer. We are hosting a large family reunion this year so I will be making plenty of slush for everyone!
Rhubarb slush is tangy, sweet, and oh so refreshing. Especially on a hot summer afternoon. Just scoop the slush into a glass, add your favorite lemon/lime soda, stir and enjoy!
The recipe calls for 1 to 1.5 cups of vodka but it is just as tasty with Brandy and I’m sure Rum would be delicious as well- feel free to mix it up a bit! Of course, go big or go home, so I tend to add closer to the 1.5 cup margin ;).
Of course, this recipe can be made alcohol-free. Just eliminate it from the recipe- it is still delicious, although a bit harder to scoop out once frozen. The alcohol keeps the slush from getting rock solid so if you omit it, you will need to work a little harder to scrape the slush out (or just set it out for a few minutes before scooping/scraping).
Be sure to label the slush appropriately especially if serving to a crowd. There was an incident at my little sisters high school graduation… my parents didn’t realize what was happening until my sisters classmates and the kids at the party started raving about how good the slush drinks were! Whoops! Luckily we have understanding friends and relatives :).
