Barley Chocolate Chip Cookies

Ingredients
  

  • 3/4 cup butter softened
  • 1 cup sucanat or brown sugar
  • 1/4 cup honey granules or white sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 3 cups freshly milled barley flour
  • 3/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1 tsp salt
  • 1 1/2 cups chocolate chips

Instructions
 

  • Preheat oven to 375F
  • In a mixing bowl, cream together the butter and the sugars until light and fluffy. Add the eggs, vanilla, baking soda, and baking powder until well blended.
  • Add in your salt, Slowly add in the flour, one cup at a time, until incorporated. Do not over mix. Stir in the chocolate chips.
  • Scoop dough using a cookie scoop or spoon about 2-3 tablespoons per cookie. Leave 1-2 inches between the cookies. Bake for 12-14 minutes, until edges start to brown. Cool on baking sheet until firm enough to move to a cooling rack. These cookies also freeze beautifully!
