Filling
- 4 cups rhubarb chopped
- 4 eggs
- 2 cups sugar
- 1/2 cup flour
- 1/2 tsp salt
Crust
- 2 cups flour
- 1 cup sugar
- 1 cup butter
Preheat oven to 350ºF.
In a food processor (can be done by hand), pulse together the flour, sugar, and butter until completely incorporated. Press into the bottom of a greased 9x13 pan. Bake in oven for 10 minutes to set (do not brown).
Mix together the eggs, sugar, flour and salt for the filling and stir in the diced rhubarb. Pour over prepared crust.
Bake for 45-60 minutes or until nicely browned. The middle should still be slightly "wiggly" when the pan is moved- this will set to a beautiful custard-like consistency. Cool and enjoy!!
