Birthday Pancakes

We have a tradition in our house for birthdays. Well, actually a few. Birthday Pancakes are always one of the favorites!

Especially with kids, sometimes the simplest extra touches, make the biggest difference. My basic pancake recipe plus whipped cream and sprinkles becomes special Birthday Pancakes that are a huge hit and birthdays would not be complete without them.

It doesn’t need to take a lot of time or money to make sweet lasting memories with your family.

Simple Pancakes

Yield: 6-9 pancakes

  • 1 cup all-purpose flour
  • 1 tbsp baking powder
  • 1 tbsp sugar
  • 1/4 tsp salt
  • 1 large egg
  • 3 tbsp vegetable oil or applesauce (healthier)
  • 3/4 cup milk

Heat your pan or griddle, use oil or butter to prevent sticking.

Mix together egg, oil and milk until well incorporated.

In separate bowl, combine dry ingredients.

Combine wet and dry ingredients, being sure not to over-mix. Small lumps are okay.

Add more milk if needed to get a good pourable consistency.

Pour batter to desired size. Flip when bubbles in batter start popping and edges look dry. ONLY flip once.

Special toppings and add-ins:

*After you pour batter, sprinkle any of these yummy extras on top, be sure not to overload them or it could be difficult to flip.

  • Sprinkles
  • Chocolate chips (mini or regular size)
  • Peanut butter chips
  • M&Ms
  • Blueberries/blackberries/raspberries
  • Strawberry slices (thin)
  • Banana slices (thin)
To make Birthday Pancakes:

* After batter is poured, shake some colorful sprinkles into batter. Flip. Let pancake cool for a couple minutes. Swirl or dollop a good amount of whipped cream. Add more sprinkles. Garnish with fresh fruit if desired.
