Rhubarb is a delicious, unique flavored vegetable. It is very tart when raw but add it to a sweet dessert and its amazing tart/sweet flavor is a real crowd pleaser.

Rhubarb itself is a healthy vegetable, but I won’t try to claim this to be a healthy recipe, it isn’t- not by any stretch of the imagination. However, since rhubarb isn’t always in season I think its okay to indulge once and awhile ;).

A great variety of rhubarb recipes can be found online (check out these mouth-watering Heavenly Rhubarb Muffins and Rhubarb Peach Jam) but I guarantee that once you make these bars, they will become a family favorite :). It will be hard to not eat the whole pan (if you do, no judgement here) once you try one custardy, sweet/tart bar.

This recipe is for a large 9×13 pan but you can easily cut all the ingredients in half to make a smaller 8×8 pan if you wish to make a smaller amount.

Ingredients
  

Filling

  • 4 cups rhubarb chopped
  • 4 eggs
  • 2 cups sugar
  • 1/2 cup flour
  • 1/2 tsp salt

Crust

  • 2 cups flour
  • 1 cup sugar
  • 1 cup butter

Instructions
 

  • Preheat oven to 350ºF.
  • In a food processor (can be done by hand), pulse together the flour, sugar, and butter until completely incorporated. Press into the bottom of a greased 9x13 pan. Bake in oven for 10 minutes to set (do not brown).
  • Mix together the eggs, sugar, flour and salt for the filling and stir in the diced rhubarb. Pour over prepared crust.
  • Bake for 45-60 minutes or until nicely browned. The middle should still be slightly "wiggly" when the pan is moved- this will set to a beautiful custard-like consistency. Cool and enjoy!!
